Chop the beef into bite-sized pieces
Peel and slice the carrots
Peel and dice the potatoes
Chop the onion
Mince the garlic
Heat olive oil in a large pot over medium-high heat
Add the beef to the pot and brown on all sides, about 5-7 minutes.
Remove the beef and set aside.
In the same pot, add the onions and garlic, cooking until softened, about 3-4 minutes.
Stir in the carrots and potatoes, cooking for another 5 minutes.
Return the beef to the pot and add the beef broth, tomato paste, bay leaves, thyme, salt, and pepper.
Bring to a boil, then reduce the heat to low and cover.
Simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender.
Remove bay leaves before serving.
