Faites ceci avant de commencer à cuisiner
- Chop the eggplant into cubes and salt them to drain excess moisture for 30 minutes.
- Dice the zucchini, bell pepper, onion, and tomatoes.
- Mince the garlic.
- Rinse and pat dry the eggplant after salting.
📋 Instructions
Heat olive oil in a large skillet over medium heat.
Add the chopped onion and garlic, and sauté until the onion is translucent.
Add the bell pepper and cook for another 5 minutes.
Stir in the eggplant and cook for about 5 minutes, until it starts to soften.
Add the zucchini and cook for another 5 minutes, stirring occasionally.
Pour in the diced tomatoes, dried thyme, salt, and black pepper.
Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.
Finish with fresh basil before serving.
