Pavlova is a light and airy meringue dessert named after the Russian ballerina Anna Pavlova. Topped with fresh berries and whipped cream, it’s a delightful treat perfect for any occasion.

Preheat oven to 120°C.

Line a baking tray with parchment paper.

In a clean bowl, ensure all equipment is grease-free.

In a large mixing bowl, beat the egg whites until soft peaks form.

Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until stiff peaks form and the mixture is glossy.

Gently fold in the cornstarch and vinegar until just combined.

Spoon the meringue mixture onto the prepared baking tray, shaping it into a round disk with a slight dip in the center.

Bake in the preheated oven for 1 hour, then turn off the oven and let the pavlova cool completely inside.

Whip the heavy cream with the vanilla extract until soft peaks form.

Once the pavlova is cool, spread the whipped cream over the top.
