- Remove shells from shrimp and devein them
- Slice lemongrass and galangal
- Tear kaffir lime leaves into smaller pieces
- Clean and slice mushrooms
- Chop cilantro for garnish

In a pot, bring chicken broth to a boil over medium heat
Add lemongrass, galangal, and kaffir lime leaves to the broth
Let the broth simmer for about 5-10 minutes to infuse the flavors
Add mushrooms and cook for another 3-5 minutes
Stir in the shrimp and cook until they turn pink, about 2-3 minutes
Add fish sauce and lime juice, adjusting to taste
Remove from heat and stir in chopped cilantro
Serve hot, garnished with extra cilantro and chili if desired
