Soak rice noodles in warm water for 30 minutes or until softened

Chop green onions and peanuts

Mince garlic

Cut tofu into small cubes

Prepare the sauce by mixing soy sauce, tamarind paste, fish sauce, and sugar

Heat vegetable oil in a large pan or wok over medium-high heat

Add minced garlic and sauté for about 30 seconds until fragrant

Add shrimp and cook until they turn pink, about 3-4 minutes

Push shrimp to one side of the pan and add tofu cubes, cooking until golden brown

Crack in the eggs and scramble them until fully cooked

Add the soaked rice noodles to the pan and pour in the prepared sauce

Toss everything together until the noodles are evenly coated and heated through

Stir in bean sprouts and chopped green onions, cooking for an additional 2 minutes

Serve hot, garnished with chopped peanuts and lime wedges
