Preheat oven to 190°C
Roll out the shortcrust pastry and line a quiche dish
Chop the bacon and onion
Grate the Gruyère cheese
Cook the bacon in a skillet over medium heat until crispy, then remove and set aside.
In the same skillet, sauté the onion until soft and translucent.
In a bowl, whisk together the eggs, milk, cream, salt, pepper, and nutmeg.
Spread the cooked bacon and sautéed onion evenly over the pastry.
Pour the egg mixture over the bacon and onion.
Sprinkle the grated Gruyère cheese on top.
Bake in the preheated oven for 30-35 minutes or until the filling is set and golden.
Let cool slightly before slicing and serving.
