Lamb shawarma is a popular Middle Eastern dish featuring marinated lamb, slow-cooked on a vertical spit, then sliced and served in pita bread with fresh veggies and sauces.

Do this before you start cooking

  • Thinly slice the lamb shoulder.
  • Finely chop the garlic and onion.
  • Mix all spices in a bowl.
  • Combine lamb with garlic, onion, spices, olive oil, lemon juice, salt, and pepper in a large bowl.
  • Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Preheat the oven to 200ยฐC.

Spread the marinated lamb on a baking sheet in a single layer.

Roast the lamb in the oven for about 30-35 minutes until cooked through.

Remove from the oven and let it rest for 5 minutes.

Slice the lamb into thin strips.

Warm the pita bread in the oven for 5 minutes.

Assemble the shawarma by placing lamb strips, sliced tomato, cucumber, and a dollop of yogurt on the pita.

Sprinkle with fresh parsley and roll the pita to enclose the filling.
