Tomatoes400 g
Red bell pepper1 unit

Scotch bonnet pepper1 unit

Chicken or vegetable stock750 ml

Vegetable oil100 ml

Thyme1 teaspoon
Bay leaves2 unit

๐Ÿ”ช Preparation

Do this before you start cooking

  • Rinse the rice under cold water until the water runs clear.
  • Chop tomatoes, red bell pepper, onion, garlic, and ginger.
  • Blend the tomatoes, red bell pepper, onion, garlic, and ginger into a smooth paste.
  • Measure out the stock and set aside.

Heat vegetable oil in a large pot over medium heat.

Add the blended tomato mixture and cook for about 10 minutes until reduced and the oil begins to separate.

Stir in thyme, bay leaves, salt, and black pepper.

Add the rinsed rice to the pot and stir to coat the rice with the sauce.

Pour in the stock and add the whole scotch bonnet pepper for heat.

Bring to a boil, then cover and reduce heat to low.

Cook for about 20-25 minutes until the rice is tender and the liquid is absorbed.

Remove from heat and let it sit covered for another 10 minutes.

Fluff the rice with a fork and serve warm.
