📋 Instructions
Soak flat rice noodles in warm water for 30 minutes or until soft
Chop Chinese sausage and spring onions
Minced garlic
Prepare the chili paste and sauces
Heat vegetable oil in a large wok over high heat
Add minced garlic and sauté for about 30 seconds until fragrant
Add Chinese sausage and shrimp, stir-fry until shrimp turns pink
Push the ingredients to one side of the wok and crack the eggs into the other side
Scramble the eggs until just set, then mix with the other ingredients
Add the soaked rice noodles, soy sauce, oyster sauce, and chili paste
Stir-fry everything together for 2-3 minutes until well combined and heated through
Add bean sprouts and spring onions, stir-fry for an additional minute
Serve hot
