Peel and cut the potatoes into thick chips.
Soak the chips in cold water for at least 30 minutes.
Pat the cod fillets dry with paper towels.
In a bowl, mix flour, baking powder, salt, and pepper.
Gradually add cold water to the flour mixture to create a batter.
Heat vegetable oil in a deep fryer or large pot to 180°C.
Drain and dry the soaked chips.
Fry the chips in the hot oil for about 5-7 minutes until lightly golden, then remove and set aside.
Dip the cod fillets into the batter, coating them evenly.
Carefully place the battered fish in the hot oil and fry for about 4-6 minutes until golden and crispy.
Remove the fish from the oil and drain on paper towels.
Return the chips to the oil and fry again for an additional 2-3 minutes until crispy.
Serve the fish and chips hot with lemon wedges and malt vinegar.
