📋 Instructions
Chop the carrot into small cubes
Slice the green onions
Beat the eggs in a bowl
Prepare cooked rice if not using leftovers
Heat vegetable oil in a large pan or wok over medium-high heat.
Add the chopped carrots and cook for about 2-3 minutes until slightly softened.
Add the green peas and cook for another minute.
Push the vegetables to one side of the pan and pour the beaten eggs into the other side.
Scramble the eggs until fully cooked, then mix with the vegetables.
Add the cooked rice to the pan, breaking up any clumps.
Pour soy sauce and sesame oil over the rice and stir to combine.
Season with salt and pepper to taste.
Add sliced green onions and stir everything together for another minute.
Remove from heat and serve hot.
