Chop the eggplant, zucchini, bell pepper, tomatoes, and onion into bite-sized pieces.
Mince the garlic cloves.
Wash and dry the basil leaves.
Heat olive oil in a large skillet over medium heat.
Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
Add the eggplant and cook for 5 minutes, stirring occasionally.
Stir in the zucchini and bell pepper, cooking for another 5 minutes.
Add the tomatoes, salt, and black pepper, mixing well.
Reduce the heat to low, cover, and let simmer for 20-25 minutes until the vegetables are tender.
Stir in the fresh basil just before serving.
