Chop the lamb into bite-sized pieces
Peel and chop the potatoes into cubes
Peel and slice the carrots
Chop the onions finely
Mince the garlic
Gather thyme, bay leaves, salt, and pepper
Heat olive oil in a large pot over medium heat
Add the lamb pieces and sear until browned on all sides, about 5-7 minutes
Remove the lamb and set aside
In the same pot, add onions and garlic, cooking until softened, about 3-4 minutes
Return the lamb to the pot and stir in the carrots and potatoes
Pour in the vegetable broth and add thyme, bay leaves, salt, and pepper
Bring to a boil, then reduce heat to low and cover
Simmer for about 1.5 to 2 hours, until the lamb is tender
Remove bay leaves before serving
