Chop the lamb into bite-sized pieces

Peel and chop the potatoes into cubes

Peel and slice the carrots

Chop the onions finely

Mince the garlic

Gather thyme, bay leaves, salt, and pepper

Heat olive oil in a large pot over medium heat

Add the lamb pieces and sear until browned on all sides, about 5-7 minutes

Remove the lamb and set aside
