Do this before you start cooking

  • Slice the chicken breast into bite-sized pieces
  • Chop the bell pepper and zucchini into cubes
  • Slice the green onions and set aside the green parts for garnish
  • Mince the garlic and ginger
  • Combine soy sauce, rice vinegar, sugar, and cornstarch in a bowl

Heat vegetable oil in a large pan or wok over medium-high heat

Add dried red chilies and stir-fry for about 30 seconds until fragrant

Add the chicken pieces to the pan and cook until browned, about 5 minutes

Add garlic and ginger, stir-frying for an additional minute

Add bell pepper and zucchini, cooking for about 3-4 minutes until slightly tender

Pour in the sauce mixture and stir until everything is evenly coated and thickened

Add peanuts and stir for another minute
