Do this before you start cooking

  • Chop the lamb into bite-sized pieces
  • Peel and chop the potatoes into chunks
  • Slice the carrots into rounds
  • Chop the onions and mince the garlic
  • Gather thyme and bay leaves

Heat olive oil in a large pot over medium heat.

Add lamb pieces and brown on all sides, about 5-7 minutes.

Add onions and garlic; sautรฉ until onions are translucent, about 3 minutes.

Stir in potatoes and carrots, cooking for another 5 minutes.

Pour in beef broth and add thyme, bay leaves, salt, and pepper.

Bring to a boil, then reduce heat to low and cover.

Simmer for 1.5 to 2 hours until lamb is tender and flavors meld.
