
Brazilian Chicken Coxinha Croquettes

Do this before you start cooking
- Boil the chicken breast in chicken broth until fully cooked, then shred it.
- Finely chop the onion and garlic.
- Prepare a workstation for breading with flour, beaten eggs, and breadcrumbs.
๐ Instructions
In a skillet, melt butter over medium heat and sautรฉ the onion and garlic until fragrant.
Add the shredded chicken to the skillet, season with salt and black pepper, and mix well.
In a saucepan, combine the chicken broth and bring to a simmer.
Gradually add the flour to the saucepan, stirring continuously to form a dough.
Once the dough pulls away from the sides of the pan, remove it from heat and let it cool slightly.
Take small portions of the dough and flatten them in your hand.
Place a spoonful of the chicken mixture in the center of the dough and fold it over to shape into a drumstick.
Dip each coxinha in the beaten eggs and then roll in breadcrumbs.
In a large pot, heat vegetable oil over medium-high heat for frying.
Fry the coxinhas in batches until golden brown, about 5-7 minutes.
Remove them from oil and drain on paper towels before serving.
