Ratatouille is a traditional Provençal vegetable dish that celebrates the flavors of summer. It's a colorful medley of vegetables simmered together, perfect as a side or a main dish.

Eggplant1 large
Zucchini2 medium
Bell pepper1 large
Onion1 large
Tomatoes4 medium
Garlic2 cloves
Basilfresh, handful

Olive oil4 tablespoon

Saltto taste
Black pepperto taste
Dried thyme1 teaspoon

🔪 Preparation

Do this before you start cooking

  • Chop the eggplant into cubes and salt them to drain excess moisture for 30 minutes.
  • Dice the zucchini, bell pepper, onion, and tomatoes.
  • Mince the garlic.
  • Rinse and pat dry the eggplant after salting.

Heat olive oil in a large skillet over medium heat.

Add the chopped onion and garlic, and sauté until the onion is translucent.

Add the bell pepper and cook for another 5 minutes.

Stir in the eggplant and cook for about 5 minutes, until it starts to soften.

Add the zucchini and cook for another 5 minutes, stirring occasionally.

Pour in the diced tomatoes, dried thyme, salt, and black pepper.

Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.

Finish with fresh basil before serving.
