Do this before you start cooking
- Soak rice noodles in warm water for 30 minutes
- Chop tofu into small cubes
- Finely chop green onions and garlic
- Prepare sauce by mixing soy sauce, tamarind paste, and fish sauce
- Crush peanuts for garnish
๐ Instructions
Heat vegetable oil in a large pan or wok over medium-high heat
Add garlic and sautรฉ for 30 seconds until fragrant
Add shrimp and tofu, cooking until shrimp turns pink and tofu is golden
Push shrimp and tofu to the side and crack the eggs into the pan, scrambling them until cooked
Add soaked rice noodles and sauce mixture to the pan, tossing everything together
Add bean sprouts and green onions, cooking for an additional 2-3 minutes
Serve hot, garnished with crushed peanuts and lime wedges
