Do this before you start cooking
- Cook rice according to package instructions.
- Chop chicken into bite-sized pieces.
- Dice the eggplant, bell pepper, and zucchini.
- Prepare basil leaves by tearing them gently.
- Zest and juice the lime.
๐ Instructions
Heat a large pan over medium heat and add a splash of oil.
Add the chicken pieces and cook until browned, about 5-7 minutes.
Stir in the green curry paste and cook for another 2 minutes.
Pour in the coconut milk and bring to a simmer.
Add the eggplant, bell pepper, and zucchini to the pan.
Stir in the fish sauce, sugar, and lime juice.
Let the curry simmer for 10-15 minutes until the vegetables are tender.
Remove from heat and stir in the basil leaves.
Serve the curry over the cooked rice and garnish with lime zest.
