Do this before you start cooking

  • Cook rice according to package instructions.
  • Chop chicken into bite-sized pieces.
  • Dice the eggplant, bell pepper, and zucchini.
  • Prepare basil leaves by tearing them gently.
  • Zest and juice the lime.
