Do this before you start cooking
- Bring a large pot of salted water to a boil for the pasta.
- Dice the pancetta into small pieces.
- Grate the Parmesan cheese.
- Crack the eggs into a bowl and whisk until combined.
- Mince the garlic.
๐ Instructions
Cook the spaghetti in the boiling water according to package instructions until al dente.
In a large skillet, heat olive oil over medium heat and add the diced pancetta.
Cook the pancetta until crispy, about 5-7 minutes.
Add minced garlic to the skillet and sautรฉ for 1 minute until fragrant.
Once the pasta is cooked, reserve 1 cup of pasta water and drain the rest.
Add the drained spaghetti to the skillet with pancetta and garlic, tossing to combine.
Remove the skillet from heat and quickly add the egg mixture, stirring continuously to create a creamy sauce.
If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Stir in grated Parmesan cheese and season with black pepper and salt to taste.
Serve immediately, garnished with additional Parmesan if desired.
