Do this before you start cooking
- Chop the onion, bell pepper, and tomatoes into small pieces.
- Mince the garlic cloves.
- Chop the cilantro and set aside.
- Juice the lime and keep it ready.
๐ Instructions
Heat olive oil in a large pot over medium heat.
Add the chopped onions and garlic, sautรฉ until the onions are translucent.
Stir in the bell pepper and cook for another 5 minutes.
Add the tomatoes and cook until they soften.
Season with salt, black pepper, and paprika.
Pour in the coconut milk and bring to a simmer.
Add the fish fillets, ensuring they are submerged in the sauce.
Cover the pot and cook for about 15 minutes, or until the fish is cooked through.
Stir in the lime juice and chopped cilantro just before serving.
