Baba Ganoush is a traditional Middle Eastern dip made from smoky roasted eggplant blended with tahini, garlic, and lemon. It's a delicious and creamy spread perfect for sharing with pita bread or fresh vegetables.

📋 Instructions
Preheat oven to 220°C
Slice the eggplant in half lengthwise
Chop the garlic finely
Prepare a baking sheet lined with parchment paper
Place the eggplant halves on the baking sheet, cut side facing up
Drizzle with olive oil and sprinkle with salt
Roast in the preheated oven for about 30-40 minutes until the flesh is soft and charred
Remove from the oven and let it cool for a few minutes
Scoop the flesh out of the eggplant and place it in a food processor
Add tahini, lemon juice, chopped garlic, salt, and paprika to the food processor
Blend until smooth and creamy
Taste and adjust seasoning if necessary
Transfer to a serving bowl and drizzle with olive oil
Garnish with chopped parsley
