
Hainanese Chicken Rice

Do this before you start cooking
- Prepare a large pot of water for poaching the chicken.
- Rinse the rice under cold water until the water runs clear.
- Slice ginger and garlic for cooking.
- Chop cucumber and spring onion for garnish.
๐ Instructions
Bring the pot of water to a boil, then reduce to a simmer.
Add the whole chicken, ginger slices, and garlic to the pot.
Poach the chicken for about 30-40 minutes until fully cooked.
Remove the chicken and let it cool, saving the broth.
In a separate pot, heat a tablespoon of sesame oil.
Add the rinsed rice and stir for a few minutes until slightly toasted.
Add 600ml of the saved chicken broth to the rice and cook according to package instructions.
Once the chicken is cool, chop it into serving pieces.
Serve the chicken over the rice, garnished with cucumber and spring onion.
Drizzle soy sauce and serve with chili sauce on the side.
