Do this before you start cooking
- Preheat oven to 180ยฐC
- Grease small ramekins or a muffin tin with butter
- In a bowl, combine sugar and coconut flakes
๐ Instructions
In a mixing bowl, whisk the egg yolks until smooth
Add the coconut milk, melted butter, vanilla extract, and salt to the egg yolks, and mix well
Gradually stir in the sugar and coconut flakes until fully combined
Pour the mixture into the prepared ramekins or muffin tin
Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins
Bake in the preheated oven for about 30-35 minutes, or until set
Remove the ramekins from the water bath and let them cool to room temperature
Refrigerate for at least 2 hours before serving
To serve, carefully invert each quindim onto a plate
