Do this before you start cooking

  • Cut beef into 2-inch cubes and season with salt and pepper
  • Chop onions, carrots, and potatoes into bite-sized pieces
  • Mince the garlic
  • Measure out the Guinness beer and beef broth
  • Heat olive oil in a large pot

Add the beef to the pot and brown on all sides, about 5-7 minutes

Remove the beef and set aside

In the same pot, add onions, carrots, and garlic; sautรฉ until softened, about 5 minutes

Sprinkle flour over the vegetables and stir to combine

Slowly pour in the Guinness beer, scraping the bottom of the pot

Return the beef to the pot and add beef broth, thyme, bay leaves, salt, and pepper

Bring to a boil, then reduce heat and simmer for 2 hours

Add the potatoes in the last 30 minutes of cooking

Remove bay leaves before serving
