Lamingtons are a classic Australian treat made from light sponge cake, coated in chocolate icing, and rolled in desiccated coconut. They are perfect for afternoon tea or as a delightful dessert.

Do this before you start cooking

  • Preheat oven to 180ยฐC
  • Grease and line a square baking pan with parchment paper
  • In a bowl, sift together flour, baking powder, and cocoa powder
  • Melt the butter and let it cool slightly
  • Prepare the icing by mixing icing sugar, cocoa powder, and milk in a bowl

In a large bowl, cream together the sugar and melted butter until light and fluffy

Add eggs one at a time, beating well after each addition

Stir in the vanilla extract

Gradually add the flour mixture to the butter mixture, alternating with milk, and mix until just combined

Pour the batter into the prepared baking pan and smooth the top

Bake for 25-30 minutes or until a skewer comes out clean

Let the cake cool completely before cutting it into squares

Dip each square into the icing, allowing excess to drip off

Roll each iced square in desiccated coconut until fully coated

Place on a wire rack to set before serving
