Do this before you start cooking

  • Roast beef bones in a preheated oven at 200ยฐC for 30 minutes.
  • Soak rice noodles in warm water for 30 minutes.
  • Slice the beef sirloin thinly and set aside.
  • Chop the onion and ginger into large pieces.

In a large pot, combine roasted beef bones and water, bringing to a boil.

Add chopped onion, ginger, star anise, cinnamon stick, and cloves to the pot.

Reduce heat and simmer for at least 2 hours, skimming any foam that forms.

Strain the broth and return it to the pot, adding fish sauce and sugar to taste.

In a separate pot, cook soaked rice noodles according to package instructions.

To serve, place cooked noodles in bowls, top with raw beef slices, and pour hot broth over them.

Garnish with chopped spring onions, fresh basil, lime wedges, chili pepper, and bean sprouts.
