Do this before you start cooking
- Prepare the chicken broth in a pot and keep warm
- Finely chop the ginger and garlic
- Slice the green onions and bok choy
- Soft boil the eggs for 6-7 minutes, then cool in ice water and peel
๐ Instructions
Heat sesame oil in a large pot over medium heat
Add ginger and garlic, sautรฉing until fragrant, about 2 minutes
Add the chicken thighs and cook until browned on all sides, about 5-7 minutes
Pour in the chicken broth and soy sauce, bring to a simmer
Reduce heat and let it simmer for 15 minutes until chicken is cooked through
Remove the chicken, shred it, and return it to the pot
Add the ramen noodles and bok choy to the pot, cook according to noodle package instructions
Serve the ramen in bowls, topping with soft-boiled eggs, green onions, nori, and chili oil
