Potatoes500 g

Beef broth500 ml

Bay leaf1 unit

Chop the beef into bite-sized pieces

Peel and slice the carrots

Peel and cube the potatoes

Chop the onion and mince the garlic

Measure out the Guinness and beef broth

Heat olive oil in a large pot over medium heat

Add the beef and brown on all sides, about 5-7 minutes

Remove the beef and set aside

In the same pot, add the onions and garlic, and cook until softened, about 3 minutes

Stir in the carrots and potatoes, cooking for another 5 minutes

Return the beef to the pot and sprinkle with thyme, salt, and pepper

Pour in the Guinness and beef broth, and add the bay leaf

Bring to a simmer, then cover and reduce heat to low
