Galangal5 slices
Kaffir lime leaves4 leaves

Chicken broth1 l

Do this before you start cooking

  • Prepare all ingredients by chopping and slicing as needed
  • Remove shells from shrimp and devein them
  • Slice lemongrass and galangal
  • Tear kaffir lime leaves into smaller pieces
  • Clean and slice mushrooms
  • Chop cilantro for garnish

In a pot, bring chicken broth to a boil over medium heat

Add lemongrass, galangal, and kaffir lime leaves to the broth

Let the broth simmer for about 5-10 minutes to infuse the flavors

Add mushrooms and cook for another 3-5 minutes

Stir in the shrimp and cook until they turn pink, about 2-3 minutes

Add fish sauce and lime juice, adjusting to taste

Remove from heat and stir in chopped cilantro

Serve hot, garnished with extra cilantro and chili if desired
