Preheat oven to 175°C
Grease a 9-inch springform pan
Melt the butter
In a bowl, combine graham cracker crumbs and melted butter
Press the graham cracker mixture into the bottom of the prepared springform pan
In a large mixing bowl, beat the cream cheese until smooth
Add sugar, sour cream, vanilla extract, lemon juice, and mix until well combined
Add eggs one at a time, mixing on low speed until just incorporated
Pour the cream cheese mixture over the crust in the springform pan
Bake for 50-60 minutes or until the center is set and the edges are slightly golden
Turn off the oven and leave the cheesecake inside for 1 hour
Remove from oven and let cool at room temperature before refrigerating for at least 4 hours before serving
