Do this before you start cooking
- Soak black beans in water overnight.
- Chop the onion and garlic.
- Cut the pork, chorizo, smoked sausage, and beef into bite-sized pieces.
- Prepare rice according to package instructions.
๐ Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onions and garlic, and sautรฉ until translucent.
Add the pork shoulder and beef brisket, browning them on all sides.
Stir in the chorizo and smoked sausage, cooking for another 5 minutes.
Add the soaked black beans, bay leaves, salt, and black pepper.
Pour in enough water to cover the beans and meats.
Bring to a boil, then reduce heat to low and simmer for about 2 hours, until beans are tender.
In the last 15 minutes of cooking, add chopped collard greens to the pot.
Serve the feijoada hot with rice and slices of orange on the side.
